Thai Curry with Spam and Tofu
1-2 Tbs Mae Ploy curry paste (red, green or panang)
1 can coconut milk
2 Tbs fish sauce
1 Tbs sugar
chunk of ginger
a few cloves garlic
Veggies of your choice (sweet peppers, bamboo shoots, broccoli, peas or pea pods, etc. etc)
1 Tub tofu
1 can Spam (teriyaki is an excellent choice)
oil
Fire up camp stove
Add oil to pot, heat, mix in curry paste, garlic, ginger and fry until fragrant.
Add a little coconut milk to make saucy.
Add tofu, spam, fish sauce, sugar, and simmer a bit.
Add rest of coconut milk, and veggies, and simmer a bit more.
If too thick, add some water or broth.
Serve with Uncle Ben's rice or any other instant rice in a pouch.
Spambalaya
1 can turkey spam (or chicken (pieces or diced) and/or diced ham and/or diced andouille sausage/ and or shrimp) (or tofu meat like substance)
onion
a few cloves garlic
green pepper
stalk celery
2 cans diced tomatoes
1 1/2 c rice
1 tsp thyme
1 tsp sage
1 tsp oregano
Louisiana hot sauce
Saute onion, garlic, then add meat (cook for a while if using chicken), then add celery+pepper. Glug some hot sauce in. Add spices, tomatoes and rice. More hot sauce. Let simmer for about 20 minutes. More hot sauce.
